Our Story

Delysia Chocolatier, an artisan chocolate company based in Austin Texas, was launched by Nicole Patel in the fall of 2008. But the story began a few years earlier.

In December of 2006, when Nicole was eight months pregnant with her first child, she was in search of edible holiday gifts. She stumbled upon a recipe for chocolate truffles and after numerous recipe modifications she had created her first batch of perfectly rolled and dipped chocolate truffles. Her friends and family were both impressed and delighted with the hazelnut, peanut butter, and mint chocolate truffles they received.

As a new mother, Nicole thought the holiday gifts she created were simply decedent treats for special occasions and nothing more. However, her friends would not let her forget about these handmade delights. Nicole was asked continuously over the next two years to make chocolate truffles for every social gathering, from birthday parties to movie nights.

With her loving husband’s encouragement, Nicole launched Delysia Chocolatier in the fall of 2008. Her first delivery was on October 3, 2008 to Becker Vineyards, for which she had created handmade chocolate truffles using their Port. Unrealized at the time, this partnership established her specialty – creating chocolate products using estate wines. Nicole is the first in Texas to use local wines to create handmade truffles.

In the summer of 2009, when Nicole was pregnant with their second son, Delysia Chocolatier became a full time venture. The company’s product lines have expanded to include artisan chocolate menus, personalized solid chocolates, and chocolate bride and groom cake toppers. In the fall of 2009, Nicole was awarded First Place in the Professional Category at the Texas Chocolate Festival for her Cabernet Sauvignon truffle, in addition to her wasabi raspberry and cigar truffles. Her wine and lavender truffles were personally selected by celebrity wedding photographer Elizabeth Messina to be featured at her ‘A Lovely Workshop’ in Paris, France. Her partnerships have grown to include multiple Texas and Colorado vineyards, The Salt Lick, Hyatt Regency, and Neiman Marcus.
